Make perfect blueberry pancakes yourself

Ingredients for 2 servings:

  • 2 eggs
  • pinch(s) of salt
  • 4 tsp vanilla sugar
  • 2 tsp, heaped baking powder
  • 2 tsp vanilla pulp
  • 400 g flour
  • 410 g milk
  • 100 g blueberries

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

1. Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Then, in another bowl, combine the eggs with the vanilla sugar, baking powder, vanilla extract, and a pinch of salt. 2. Now fold in the flour and milk until the batter reaches a creamy consistency (see video). Then fold in the stiffly beaten egg whites. 3. Next, preheat a pan and add the blueberries to the batter, stirring gently to prevent them from bleeding too much. 4. Cook the pancakes in the pan until each side is golden brown. Serve with maple syrup or my blueberry sauce (also available online as a recipe). Have fun making this! Naturally Delicious!
