Fried noodles Szechuan style

Ingredients for 4 servings:

  • 500 g Chinese egg noodles (or spaghetti if necessary)
  • 250 g mushrooms
  • 200 g tofu or turkey meat
  • 20 g sesame seeds
  • 4 tbsp sauce (mushroom sauce)
  • 3 tbsp soy sauce, light
  • 1 tsp ginger
  • some pepper (Szechuan pepper)
  • 2 tsp broth (dashi)
  • 1 clove(s) garlic
  • some sambal oelek
  • 1 tbsp cornstarch and water
  • 1 tsp vinegar (rice vinegar)
  • 2 tsp tomato paste
  • 1 onion(s)
  • salt and pepper

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Cook the noodles. Sauté the onions with the garlic. Add the noodles. Stir well while frying, otherwise they will burn. Add 1-2 teaspoons of broth, 1 tablespoon of light soy sauce, and 2 tablespoons of mushroom sauce, and continue stirring well. Then add a little sesame seeds and season to taste with salt and pepper. Marinate the soy meat (or turkey) in a marinade made from 2 tablespoons of mushroom sauce, 1-2 teaspoons of vegetable broth, 1-2 teaspoons of ginger, a little sambal oelek, and 2 tablespoons of soy sauce for about 1 hour. Then fry briefly and transfer to a separate bowl. Mix with about 200-300 ml of water and add 1 tablespoon of cornstarch. Thoroughly wash and chop the required ingredients. Now sauté the mushrooms with the garlic, onions, and ginger. Add the marinated soy mixture. Then add 1 teaspoon of rice vinegar, 2-3 teaspoons of tomato paste, and some ground Szechuan pepper. Serve immediately and garnish with some sesame seeds.
