Spareribs recipe from Colorado

Ingredients for 4 servings:

  • 2 kg spareribs (skinned ribs)
  • 1 tsp pepper
  • 250 g ketchup
  • 360 ml water
  • 3 tbsp white vinegar
  • 3 tbsp vinegar (apple cider vinegar)
  • 6 tbsp Worcestershire sauce
  • 6 tbsp sugar, brown, fine
  • ½ tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp curry

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 3 hours 50 minutes; Total time approx. 4 hours 10 minutes

Remove the skin from the inside of the spare ribs and cut them into 3-4 pieces. Place them in the roasting pan and sprinkle with pepper. Mix the remaining ingredients and spread them over the ribs. Cover and bake in the oven at 175°C for at least 2.5 hours, preferably 3-3.5 hours. Start with the meat side down, turning and basting after 1 hour. Repeat every 30 minutes. At the end of the roasting, remove the lid and bake for another 20 minutes. We like to serve this with sweet potato fries and homemade coleslaw.
