Ingredients for 2 servings:
- 2 carrots
- 1 bunch of spring onions, alternatively 1 onion
- 1 pointed pepper, red or as desired
- 1 tbsp olive oil
- 150 g edamame, without shell, frozen
- 50 g corn
- 100 ml water
- 2 tbsp soy sauce
- 1 dash of sweet chili sauce
- 150 g glass noodles
- 1 tbsp crunchy peanut butter
- e.g. peanuts

Soak the glass noodles in hot water according to the package instructions. In the meantime, finely slice the carrots and finely chop the spring onions. Heat the oil in a pan and sauté the spring onions, followed by the carrots and edamame beans, for 4-5 minutes. Deglaze with soy sauce, add the water and peanut butter, and stir well until well combined. Add the corn and season with sweet chili sauce. Drain the glass noodles, add them to the pan, and mix well. Sprinkle with peanuts, if desired, and serve immediately.
