Ingredients for 1 servings:
- 20 g yeast
- 150 ml milk
- 1 pinch of salt
- 300 g flour
- 800 g onion(s)
- 50 g butter
- 125 ml vegetable stock
- pepper
- 2 tbsp cornstarch
- 175 g bacon
- 3 egg yolks
- 5 tbsp cream
Instructions
Working time approx. 30 minutes; Rest time approx. 1 day 21 hours; Total time approx. 1 day 21 hours 30 minutes
Mix the yeast with a little warmed milk, a pinch of salt, and 100g of flour, cover, and let rise for about 15 minutes. Then sift the remaining flour into a bowl and add the yeast. Mix with the remaining milk to form a firm dough. Let rise for another 30 minutes. Preheat oven to 200°C. Roll out the dough thinly. Line a greased 28cm springform pan with the dough, pressing up the edges. Prick the base of the dough with a fork. Peel the onions and slice them into rings. Melt the butter in a saucepan and fry the onions until translucent. Add 125ml of stock, salt, and pepper, and simmer for about 10 minutes. Mix the cornstarch with 2 tablespoons of water, add to the onions, and bring to a boil. Dice the bacon and mix the egg yolk with the cream. Add the bacon and egg yolk and cream to the onions and stir in, then immediately pour onto the dough and bake for about 45 minutes.
