Speculoos cream with fruit

Ingredients for 4 servings:

  • 20 biscuits (small round egg biscuits, approx. 35 g)
  • 5 tbsp orange liqueur
  • 125 g mascarpone
  • 250 g low-fat curd cheese
  • ½ pack spice mix for speculatius
  • 1 packet of vanilla sugar
  • 1 can of cocktail fruits or fruits of your choice
  • 100 ml whipped cream
  • 2 tsp almonds, sliced

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pour the fruit cocktail into a sieve and drain well. Place the cookies in 4 tall glasses and drizzle with a total of 2 tablespoons of orange liqueur, then let it sit briefly. Mix the quark, mascarpone, spices, and vanilla sugar with the remaining orange liqueur until smooth, then whip the cream until stiff. Spread the fruit cocktail on the cookies, leaving some fruit for decoration. Top with the cream and pipe a generous dollop of cream on top. Garnish with the remaining fruit and sprinkle with almonds. Serve.
