Hearty Jerusalem artichoke pan

Ingredients for 2 servings:

  • 400 g Jerusalem artichoke
  • 2 onions
  • 3 carrots
  • 250 g smoked bacon
  • 250 ml vegetable stock
  • 125 ml sweet cream
  • 100 g mountain cheese (min. 45% fat), grated
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Cut the smoked bacon into cubes and fry in a heavy pan. Peel and roughly chop the onions, and sauté them in the hot bacon fat. Peel and slice the carrots and Jerusalem artichokes, add them to the onions and bacon, and sauté them as well. Deglaze with vegetable stock and cream and simmer for about 15-20 minutes. Season with salt and pepper. Sprinkle the grated cheese evenly over the dish. Bake in a preheated oven at 180°C (top/bottom heat) until the desired browning is achieved (about 10-15 minutes). Serve hot.
