Ingredients for 4 servings:
- 100 g glass noodles
- 300 g minced beef
- 1 bunch of spring onions
- 10 cherry tomatoes
- 1 stalk coriander, fresh
- ½ lime(s), the juice (alternatively lemon)
- 1 tbsp brown sugar
- ½ tsp spice paste (chili paste)
- 1 tbsp soy sauce, light
- 1 tsp oil (sesame oil)
- 1 tbsp fish sauce

Soak the glass noodles in lukewarm water for about 10 minutes, then briefly blanch them in boiling water. Rinse well and, if necessary, cut them with kitchen scissors to make the noodles easier to mix. Cook the minced meat in a little water. Wash the onions and cut them into approximately 1 cm strips. Wash the tomatoes and halve them. Mix all ingredients thoroughly and add the chopped cilantro. Season to taste with lime juice, chili paste, sugar, sesame oil, soy sauce, and fish sauce.
