Spinach sauce for spaghetti with pine nuts

Ingredients for 4 servings:

  • 500 g spinach, ready to cook
  • 1 small onion(s), chopped
  • 2 garlic cloves, chopped
  • 200 ml cream
  • 1 tbsp crème fraîche
  • ½ tsp thyme, dried
  • ½ tsp basil, dried
  • 1 pinch of nutmeg
  • 100 g Parmesan, freshly grated
  • 2 tbsp pine nuts
  • 2 tbsp butter
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with crème fraîche and Parmesan

Let the dripping-wet spinach wilt in a covered pot with a little salt for 3 minutes, then drain in a colander. Finely chop the spinach. Heat butter in a pan and sauté the onion and garlic until translucent. Add the spinach, cream, herbs, and spices. Reduce the cream slightly, stir in the cheese, and heat the sauce briefly again. Serve the spaghetti in portions with the sauce and garnish with pine nuts.
