Ingredients for 2 servings:

  • 1 small can of tomatoes, peeled and diced (also called polpa)
  • 1 small onion(s)
  • 3 cloves garlic
  • 1 tbsp olive oil
  • 1 tbsp sour cream or crème fraiche
  • 1 tsp, levelled sugar
  • salt and pepper
  • 2 sprigs parsley, chopped

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Peel the onions and garlic. Dice both and fry in olive oil until golden yellow (deglaze with a splash of red wine if using). Add the tomatoes and cook for 5 minutes. After about 5 minutes, add the sugar and cook for another 5 minutes. Add the sour cream and simmer for another 2 minutes. Puree the whole thing with a hand blender until you have a creamy soup. Season with salt and pepper. Sprinkle with chopped parsley before serving. Tip: This soup also goes well with pasta! However, DO NOT puree the whole thing.
