Peanut butter sauce – recipe from Gambia
Dice the onions, wash/clean the vegetables, and cut them into bite-sized cubes. Brown the meat in a large pot in oil until crisp, then remove. In the same pot, sauté the onions in a little oil, then sauté the vegetables briefly. Then add the canned tomatoes and the meat. Pour in the stock. Dissolve the peanut butter in a little water and add it as well. Simmer for about 1.5 hours, until the meat is cooked. The sauce is ready when the fat floats to the top. If you prefer it less spicy, cook the pepper whole. Domada is served with couscous, but it also tastes good with basmati rice.
