Raspberry Marzipan Muffins

Ingredients for 1 servings:

  • 120 g marzipan paste
  • 125 g butter
  • 130 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 eggs
  • 100 g raspberries, frozen or fresh
  • 200 g flour
  • 1 pkt. pudding powder, vanilla flavor
  • 2 tsp baking powder
  • 50 g chocolate, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk the marzipan, butter, sugar, salt, and vanilla sugar until smooth. Beat in the eggs one at a time. Briefly warm the raspberries in a saucepan until softened (about 5 minutes over medium heat). Add the raspberries and their juices to the batter and stir in. Gradually stir in the flour, pudding powder, baking powder, and chopped chocolate. Spoon the batter into the holes of a muffin tin lined with paper baking cups and bake in a preheated oven at 180°C for about 25-30 minutes. Remove from the oven and let cool. If you like, you can top the muffins with glaze. This batch makes about 12-15 muffins.
