Quick, delicious stuffed tomatoes

Ingredients for 4 servings:

  • 3 m.-sized eggs
  • 1 tbsp butter
  • 4 large tomatoes
  • 1 tbsp, sautéed herbs, chopped (e.g. parsley, chives, possibly others)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with boiled egg, salt, pepper, butter and herbs

First, boil the eggs hard, peel them, and then cut them into small cubes. While the eggs are cooking, cut a top off each tomato and hollow them out. Place the flesh into a bowl and mix with the diced eggs, chopped herbs, and butter, and season with salt and pepper. Fill the tomatoes with this mixture and cover with their tops. Then cook the stuffed tomatoes in a covered pot with a little fat over medium heat for 10 minutes. This goes well with potatoes, rice, or potato salad.
