Vegetable crostini

Ingredients for 8 servings:

  • 150 g butter or oil for frying
  • 600 g zucchini
  • 450 g mixed peppers
  • 600 g tomatoes
  • 4 garlic cloves
  • 3 packs of mozzarella
  • basil
  • Pepper, freshly ground
  • Baguette(s) or rolls
  • chives
  • Parsley

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean the zucchini, bell peppers, and tomatoes and cut them into fine cubes. Heat butter or oil in a pan and fry the diced vegetables. Then let it cool. Cut the mozzarella into cubes and add it to the cooled vegetable mixture. Chop the herbs and add them along with the garlic and pepper (and salt to taste), and mix everything together. Cut the baguette or the warmed bread rolls into slices. Top with the vegetable and cheese mixture and bake in a preheated oven at 180°C for about 5-6 minutes (until the cheese has melted). Tip: It also tastes great if you spread the baguette or bread rolls with herb butter beforehand.
