Tunisian chicken with dried fruit

Ingredients for 4 servings:

  • 400 g chicken breast fillet(s)
  • 1 onion(s)
  • 2 cloves garlic
  • 1 piece(s) of ginger root, approx. 4-5 cm
  • 2 tbsp curry powder
  • 1 tbsp olive oil
  • 100 g date(s), dried, pitted
  • 100 g apricot(s), dried
  • 2 tbsp almonds, chopped
  • 2 tbsp syrup, (date syrup), or maple syrup
  • 100 g natural yogurt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Season the chicken breast fillets with salt and pepper as desired. Purée the garlic, onion, and ginger with a hand blender until a paste forms. Brown in hot oil, add the chicken breast, dried fruit, curry, and syrup, and mix well. After 5-10 minutes, add 200 ml of water and simmer for about 15 minutes, turning the meat occasionally. Remove the meat from the sauce briefly, add the yogurt to the sauce, stir, and add the meat back in. Heat the mixture back up and serve. Serve with couscous or rice.
