- 1 lemon(s)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
(Benin)
Soak the dried fish overnight. The next day, simmer it in a little water for 20 minutes. Shred the dried fish and chop the cod very finely. Beat the eggs until frothy. Add the wheat flour, stirring constantly to avoid lumps. Gradually add the milk. Add the onion, garlic, and a pinch of black pepper. Stir well. Add the dried fish and cod and stir well again. If the mixture is too soft, add a little breadcrumbs. Let it cool. Form the fish mixture into twelve balls and roll them in breadcrumbs. Heat butter and fry the balls until golden brown. Remove and drain on kitchen paper. Arrange them on a platter, garnish with parsley sprigs and lemon slices, and serve. Simply delicious.
