Ingredients for 2 servings:
- 1 chicken (country rooster), divided into 4 parts
- 3 carrots
- 2 shallots
- 1 spring onion(s)
- 1 piece(s) ginger (walnut-sized)
- 4 cloves garlic
- 150 g bacon, streaky
- 1 bottle of wine, Burgundy (e.g. Passetoutgrai)
- 50 ml schnapps (pomace schnapps)
- 3 carnations
- 3 juniper berries
- ½ tsp coriander
- ½ tsp pepper (black and Sichuan)
- 1 sprig(s) of thyme
- 1 sprig(s) rosemary
- 2 bay leaves
- 150 ml chicken broth
- Olive oil, for frying
- butter
- Flour
- Cocoa powder, black
- 100 g porcini mushrooms
Instructions
Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes
Finely chop the carrots, onions, ginger, and garlic, and crush all the spices in a mortar and pestle. Place the chicken pieces, vegetables, and spices in a bowl and cover with the wine, then add the schnapps. Let it marinate for 2 days. When it’s ready (2-3 hours more or less doesn’t matter), remove the chicken pieces from the marinade, pat dry, coat in flour, and sear on both sides in a mixture of oil and butter (lard) for at least 5 minutes. Dice the bacon and clean the mushrooms and slice them thinly. Strain the marinade through a sieve, reserving the vegetables. Remove the browned pieces of meat from the pot and keep warm. Brown half of the bacon in the fat, add the vegetables and herbs, and let everything brown well. Return the chicken pieces to the pot and cover with the marinade and chicken stock. Simmer everything together over medium heat for at least an hour. Then remove the chicken pieces from the pot (they will fall apart quite a bit). Strain the stock through a sieve, collecting and discarding any vegetables, etc. Heat butter in a pot, fry the remaining bacon, add the mushrooms, and sauté. Dust with a little cocoa powder and flour. Return the meat to the pot, top up with the marinade, and simmer for another 5-10 minutes. Serve with bouillon potatoes or creamy pasta (e.g., macaroni) and a nice Burgundy wine, such as one from the Côtes de Nuits.
