Carolina-style barbecue sauce

Ingredients for 10 servings:

  • 120 g butter
  • 120 ml oil (corn germ oil)
  • 180 g diced onion(s) (about 3)
  • 2 lemons, juice and zest, (untreated)
  • 2 cans of tomatoes, 850 ml each
  • 300 ml vinegar (red wine vinegar)
  • 100 ml Worcestershire sauce
  • 120 g brown sugar
  • 1 tsp chili flakes
  • 1 tbsp salt (hickory smoked salt)
  • 2 tbsp mustard powder, English
  • 2 tbsp honey
  • 1 tbsp celery salt
  • ½ tsp Tabasco

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Pass the tomatoes (or buy passata). Heat the butter and oil in a large pot and sauté the onions. Add the tomatoes and all the remaining ingredients, bring to a boil, and reduce over low heat for about 60 minutes. This sauce can be used to marinate grilled meat or to brush it over the meat while cooking. Of course, it can also be used like a regular barbecue sauce.
