- 1 kg potatoes
- 100 g flour
- 100 g starch flour
- 2 eggs

Dumplings made from boiled potatoes, very simple
Boil the potatoes (I boil them to avoid burning my fingers). While they’re still hot, either press them through a potato ricer or simply mash them with a masher. When the potatoes are just lukewarm, add the flour, starch, and eggs. Season the dough with salt. The dough should be only slightly moist. If you’re unsure about the consistency, you can make a test dumpling and add more starch if needed. With wet hands, form small dumplings from the dough and simmer them in plenty of lightly boiling salted water for about 10 minutes. When the dumplings rise to the top, let them simmer gently for about 5 minutes, then remove and serve. Tip: Season the dough with herbs or, as a vegetarian main course, fill it with diced cheese, sautéed mushrooms, or onions. Serve with a cream sauce.
