Classic American barbecue sauce

Ingredients for 1 servings:

  • 3 m.-sized onion(s)
  • 4 cloves garlic
  • 1 ginger root, about the size of a thumb
  • 3 tbsp honey
  • 600 ml cola
  • 400 g tomatoes, chunky, from the can
  • 2 tbsp tomato paste
  • 2 shots of Worcestershire sauce
  • Smoked salt (hickory)
  • pepper
  • ½ lemon(s), untreated, grated zest
  • Garam Masala, or cinnamon
  • oregano
  • cumin
  • olive oil
  • e.g. chili powder or Tabasco

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Slice the onions into rings and roast in olive oil over medium heat. Roughly chop the garlic and add it when the onions are already half browned. Roast both until quite dark, but be careful not to blacken them. Finely chop the ginger and add it. Then add the honey and let it caramelize briefly. Deglaze with the cola. Now add the remaining ingredients and season to taste with hickory smoked salt, pepper, garam masala or cinnamon, oregano, and cumin. If it’s too sour, sweeten with honey. If it’s too sweet, add a little more Worcestershire sauce. Simmer for about 30 minutes. Purée the sauce with an immersion blender and then strain it. If it’s too thick, thin it with cola and/or broth; if it’s too thin, thicken it with a little tomato paste, and season again if necessary. If you like, add chili or Tabasco to taste.
