Beetroot BBQ ketchup

Ingredients for 1 servings:

  • 1 pack of beetroot, approx. 500 g, pre-cooked
  • 500 ml beetroot juice, organic
  • 4 tbsp rapeseed oil
  • 5 cloves garlic, very finely chopped
  • 2 medium-sized onions, diced
  • 1 large chili pepper(s) (Chipotle), dried
  • 1 tbsp tomato paste
  • ½ tsp liquid smoke (Liquid Smoke Hickory)
  • 1 tbsp, heaped sea salt
  • 3 tbsp, heaped cane sugar, brown
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • n. B. Vegetable broth, clear
  • 1 tsp sweet paprika powder
  • ½ tsp black pepper
  • ½ tsp cinnamon powder
  • ½ tsp coriander powder
  • ½ tsp allspice powder
  • 1 tsp cumin powder
  • 1 tsp curry powder
  • 1 piece(s) ginger, organic, hazelnut-sized, with peel, finely chopped
  • e.g. salt and pepper
  • Sugar
  • some olive oil

In a wide, deep saucepan, heat the olive oil to three-quarters heat. Sauté the onion and garlic until translucent and add the tomato paste. Sauté briefly while stirring. Deglaze with about 50 ml of vegetable stock and simmer for about 5 minutes. Add the roughly diced beetroot and the beetroot juice. Let it boil briefly. Now add all the other ingredients according to the list. Stir everything in well. Simmer everything in an uncovered pan at 1/3 heat for about 1.5 to 2 hours. Stir frequently and if the sauce becomes too thick, add a little more vegetable stock. Season and thicken the sauce by reducing it. This way, the flavors combine to create a complete work of art. Next, use the hand blender. Puree the contents of the pan thoroughly and for a long time on high. Then pass it through a fine sieve into a new pan. Now it’s time to taste and add salt, pepper, and sugar to taste. If you’re still lacking a bit of acidity, add a little more lemon juice until it’s just right. Now all you have to do is adjust the consistency. If the ketchup is a bit too thin for your taste, simply let it reduce a little, stirring occasionally. If it’s too thick, adjust it to the ideal consistency with a little vegetable stock. Once you’ve reached the perfect consistency, whisk in a good splash of olive oil. This gives the sauce a lovely shine. Note: The spices and their proportions are not gospel. The sauce is very flexible, and everyone should definitely experiment with their favorite spices. The liquid smoke is available online, as is the chipotle chili. Neither should be missing from any barbecue household.
