Salmon from the oven

Ingredients for 2 servings:

  • 4 slices of salmon fillet
  • 400 g potatoes, small, cooked and peeled
  • 300 g tomatoes, cut into quarters
  • 2 garlic cloves, finely chopped
  • 100 ml dry white wine
  • 100 ml fish stock
  • e.g. salt and pepper
  • some oil or butter for the casserole dish

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Wash the salmon, pat dry, season with salt, and place skin-side down in a greased baking dish. Arrange the potatoes and tomato quarters in the dish, scatter the chopped garlic over the salmon, and season with salt and pepper. Then, combine the wine and stock and pour over the salmon. Cover with aluminum foil and bake in the oven at 180°C for 30 minutes.
