Adobo with Cola

Ingredients for 4 servings:

  • 1 kg pork belly or chicken thighs, wings, drumsticks
  • 1 piece(s) ginger, approx. 5 cm
  • 5 cloves garlic
  • 1 large onion(s)
  • 2 tsp peppercorns, crushed
  • 1 cup soy sauce, light or dark
  • ½ cup vinegar, mild, or ¼ cup regular vinegar
  • 4 bay leaves
  • 4 bell peppers, green
  • 0.7 liters of Coke
  • 2 tbsp oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours 10 minutes

Filipino recipe, with pork belly or chicken

Use a normal coffee cup to measure. Cut the meat into desired portions. Peel the ginger and cut into thin slices. Finely chop the garlic and onion. Cut the bell pepper into coarse strips. Heat the oil in a large pan. Fry the garlic and ginger over high heat for about 15 seconds, add the onion and fry briefly. Now add the meat and fry over medium heat for about 10-15 minutes, until the fat starts to render from the meat. Add the peppercorns, bay leaves, soy sauce and vinegar and simmer for a further 5 minutes, then add the cola and simmer uncovered for about 1-1.5 hours, until the stock has reduced by half. Add the bell pepper and cook for a few minutes until tender. Jasmine or basmati rice goes best with this.
