Ingredients for 4 servings:
- 250 g flour (wheat flour)
- 3 tsp baking powder
- ½ tsp salt
- 100 g corn flour, (or a little more)
- 50 g sugar
- 1 egg(s)
- ¼ liter of milk
- 60 g butter, melted
- Oil, for greasing
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Grease a loaf pan and sprinkle with breadcrumbs. Preheat the oven to 200°C. Sift the wheat flour and baking powder into a bowl. Add the salt, cornflour, and sugar and mix well. Whisk the egg, milk, and melted butter together well and add to the dry ingredients. Quickly and briefly mix everything with a whisk on high speed until a batter forms. The batter will be even. Immediately pour into the pan and bake in the oven on the lowest rack at approx. 200°C for 30-35 minutes. This cornbread tastes particularly good warm, spread with butter and/or honey, and is a delicacy at the breakfast table in America. It is important that the cornflour is fresh for this bread, otherwise the bread will develop a slightly rancid taste.
