Ingredients for 2 servings:
- some oil
- 1 large onion(s)
- 3 cloves garlic
- 300 g black pudding (fresh whole or from a jar/can)
- 5 gherkins
- 1 bunch of parsley
- 1 pinch of salt
- some pepper
- some nutmeg, freshly ground
Instructions

First, heat the oil in a pan. Finely dice the onions and fry them in the hot oil. Finely dice the garlic (alternatively, press it with a garlic press). Add the garlic to the onions and fry. Meanwhile, finely chop the black pudding. When the onions are golden brown, add the black pudding to the pan. Brown everything, reduce the heat, and let it cook slowly. Whole sausage is firmer and only needs about 10 minutes; sausage from a jar or can may take a little longer. Depending on your taste, fry until either the mixture slowly thickens or the liquid has evaporated. The color of the sausage usually stays dark red; only the consistency changes with the longer cooking time. Season to taste with salt, pepper, and nutmeg. Quarter the gherkins lengthwise and then cut into small quarter slices. Add the gherkins to the sausage mixture in the pan and heat gently. Finely chop the parsley and add it, then mix everything together. The stated amount for 2 servings includes a small plate of salad; otherwise, it’s sufficient for one person without a side dish. Since this dish consists primarily of sausage and fat, it’s not exactly a light meal, but it’s still suitable for food combining, for example, if you omit side dishes like potatoes or bread.
