Strawberry Cheesecake Ice Cream

Ingredients for 1 servings:

  • 40 g biscuit(s), crushed butter biscuits
  • 1 tbsp sugar
  • 1 tbsp butter, melted
  • 240 g cream
  • 240 milk
  • 50 sugar
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 200 g strawberries, diced
  • 70 g cream cheese, diced

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

For the cookie crumbs, mix the crushed butter cookies with the sugar and butter. Press onto the bottom of a baking pan lined with parchment paper (it’s not important that the bottom of the baking pan is completely covered) and bake at 175°C for 10-15 minutes. For the ice cream, heat the cream, milk, and sugar for about 5 minutes. When the mixture is almost boiling, reduce the heat. Stir 2 tablespoons of this mixture into the egg yolks; then stir the egg mixture into the cream mixture. Continue simmering over low heat until the mixture thickens; remove from the heat and stir in the vanilla extract. Now prepare the ice cream in the ice cream maker according to the instructions. Just before it’s ready, add the strawberry pieces, cookie crumbs, and cream cheese cubes.
