Carrot and peanut salad

Ingredients for 4 servings:

  • 5 large carrots
  • 2 tbsp peanut butter, creamy
  • 3 tbsp vegetable broth
  • 2 tbsp soy sauce
  • 2 tbsp white wine vinegar
  • ½ tsp sugar
  • 1 chili pepper(s) (Thai), pitted and chopped
  • ½ tsp sesame oil
  • 1 shallot(s), finely chopped
  • n. B. Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the carrots and cut them into julienne strips. In a bowl, combine all the following ingredients, except the shallots, to make a dressing. Then pour over the carrots. Mix well, sprinkle with the diced shallots, and serve.
