Ingredients for 8 servings:
- 2.2 kg spare ribs
- 55 g sugar
- 1 tbsp garlic salt
- 1 tbsp onion powder
- 2 tsp cinnamon powder
- 2 tsp oregano
- 1 tsp pepper
- 250 ml sauce (American Bulls Eye Barbecue Sauce *)

Sweet and Spicy Smoked Ribs
You will also need 500g of wood chips** of your choice (available from hardware stores or barbecue retailers). Soak them in hot water beforehand. Remove the silver skin from the ribs, rinse them, and pat them dry. For the rub, mix the sugar, garlic salt, onion powder, cinnamon, oregano, and pepper in a bowl. Spread it on the ribs. Rub a little bit on the bones as well. Prepare the grill. Place a bowl of water containing 2 liters of water on the bottom of the grill. Place the ribs on the grill, meat side up. Add the wood chips. Cover the grill. Grill the ribs for 3 hours at a temperature of 93° – 107°, then turn them over and grill for another hour, then turn them over again and brush them with the barbecue sauce. Continue grilling for 30 to 60 minutes, until the internal temperature of the ribs – as measured by a meat thermometer – reads 71°C. Remove the ribs from the grill and brush them again with the barbecue sauce. Typical and classic are wood chips made from hickory, a tree species from the hazelnut family that grows in America and produces a particularly aromatic smoke. But wood chips made from other types of wood, such as wild cherry, bird’s eye maple, beech, and apple, to name just a few, are also available. “Impregnated” wood chips are also very popular; these are made by scenting the wood with predominantly alcoholic beverages. Wood chips with a whiskey or brandy aroma are popular here, for example. Wood chips from old wine, sherry, or whiskey barrels are also available. One “scent” is, for example, E.g. wood chips soaked in Jack Daniels.
