Ingredients for 4 servings:
- 2 kg asparagus, white, peeled
- Salt
- 1 tsp sugar
- 4 chicken fillets
- 1 orange(s), untreated
- 1 serving of hollandaise sauce
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Cook the asparagus in salted water with sugar for about 20-25 minutes. Meanwhile, season and fry the chicken fillets. Grate the orange zest and juice the orange. Bring the butter sauce to a boil with 1/8 l of the asparagus water, stirring continuously. Remove from heat and simmer for 1/2 minute, then stir in the juice and zest. Serve with the asparagus and meat.
