Ingredients for 10 servings:
- 100 g onion(s), chopped
- 40 g mustard
- 4 egg yolks
- 10 g sugar
- 40 ml lemon juice
- 200 ml vinegar (tarragon vinegar)
- 150 ml water
- 500 ml oil (sunflower or rapeseed oil)
- ½ bunch parsley, chopped
- Cayenne pepper
- Pepper, white
- Salt
- Garlic
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
for salad
Whisk the egg yolk and mustard in a bowl, then slowly add the oil, water, and vinegar, just like you would mayonnaise. Then add the remaining ingredients. If you plan to refrigerate the sauce for several days, only add the onions to the amount of sauce you’ll be using immediately.
