Apple and chickpea curry

Ingredients for 4 servings:

  • 1 large onion(s)
  • 3 apples
  • 1 can chickpeas, 400 g
  • 1 tbsp oil
  • 1 cup broth
  • ¼ pack coconut cream
  • salt and pepper
  • 3 tsp curry powder
  • n. B. Coriander leaves

Working time approx. 30 minutes; Total time approx. 30 minutes

My sister’s favorite curry

Peel and finely chop the onion. Wash and quarter the apples. Remove the cores and cut into wedges. Rinse and drain the chickpeas. Sauté the onion in heated oil until softened. Add the apples and fry for about 4 minutes. Deglaze with the stock. Grate the coconut cream into the stock and simmer until dissolved. Season with salt, pepper, and curry powder. Stir in the chickpeas and heat through. Sprinkle with chopped coriander, if desired. Serve with turmeric-seasoned rice.
