Korean marinated meat in a wok or from the grill

Ingredients for 3 servings:

  • 500 g beef or chicken
  • 60 ml soy sauce
  • 2 tbsp sesame oil or peanut oil
  • 2 tbsp sherry or sake
  • 2 tbsp sesame seeds, roasted
  • 1 tbsp brown sugar
  • 2 tsp fresh ginger, finely chopped
  • 2 garlic cloves, finely sliced
  • Salt and pepper, from the mill
  • e.g. chili flakes
  • 4 spring onions, cut into 2.5 cm long pieces

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes

with beef or chicken

In a wok: Chop the meat into small pieces. Mix all the ingredients for the marinade (sauce lovers can double the marinade here), pour it over the meat, cover, and let it rest in the refrigerator for at least 30 minutes. Drain the meat well, reserving the marinade. Sear it with the spring onions in a pan or wok. Keep the meat warm and heat the marinade. If you like, you can thicken it a little more. Serve with rice or rice noodles. If you like vegetables, you can stir-fry them with the meat or serve them raw in thin strips. From the grill: Cut the meat into nice grilled pieces. Mix all the ingredients for the marinade, pour it over the meat, cover, and let it rest in the refrigerator until ready to grill. Then drain the marinade. No spring onions are needed here.
