Pork roulade with cheese filling

Ingredients for 4 servings:

  • 4 pork schnitzels
  • 4 gherkins
  • 50 g blue cheese
  • 4 tbsp mustard (pear mustard)
  • Walnuts
  • 4 slices of cheddar cheese
  • salt and pepper
  • 250 ml cream
  • 125 ml orange juice
  • 5 shots of Worcestershire sauce
  • 100 ml ketchup

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 30 minutes

Flatten the schnitzels, season with salt and pepper. Spread with mustard and arrange the gherkins and blue cheese on top. Distribute the walnuts over the meat and place the cheddar cheese on top. Fold in the edges, roll them up, and seal the roulades with string or a roulade pin. Sear until crispy, then deglaze with a little orange juice. Add the cream and Worcestershire sauce and simmer gently for about 3 hours. Brown some soup vegetables in a pan and add them to the roulades. Finally, remove the roulades from the pan and set aside. Place everything else in a blender or puree with a hand blender. Return the roulades to the sauce. Braised green beans and boiled potatoes go well with this.
