Ingredients for 6 servings:
- 1 kg pork loin(s)
- Salt and pepper, some garlic powder
- 40 g cornstarch
- 500 ml broth, cold
- 150 g butter, cold
- 2 egg yolks
- 2 packs of processed cheese
- 6 tbsp white wine
- salt and pepper
- 100 g cheese, Emmental for sprinkling
- lemon juice
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Season the pork loin with salt, pepper, and a little garlic and sear it in a pan over high heat. Continue roasting in the oven at 200°C for about 40-50 minutes. Meanwhile, make the cheese sauce. Mix the cornstarch with the broth and cook until smooth, stirring constantly, until thick. Then fold in the cold butter in small pieces, alternating with the beaten egg yolk. Stir in the cheese wedges, wine, and the flavorings. The sauce should be thick, but not boiling. For a more refined finish, you can also add stiff whipped cream. Slice the finished meat, reassemble it, and place it in an ovenproof dish. Cover with the cheese sauce, sprinkle with Emmental cheese, and bake at 220°C until golden brown. This goes well with potato dumplings and salad.
