Plum and nut bread

Ingredients for 2 servings:

  • 300 g plum(s), ripe or damsons
  • 100 g nuts, mixed, roughly chopped
  • 200 g fruit (dried fruit according to taste)
  • 125 ml milk
  • 200 g flour
  • 250 g wheat flour (wholemeal)
  • 1 tsp sugar
  • 1 tsp salt
  • 1 packet of dry yeast
  • 1 tsp cardamom

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

So wonderfully hearty

First, wash the plums, halve them, remove the stones, and chop them finely. Roast the nuts in a dry pan until golden brown and chop the dried fruit finely. Heat the milk and 125 ml water to lukewarm. Combine the two types of flour, salt, sugar, and yeast. Pour in the milk-water mixture and knead with a dough hook until a smooth dough forms. Now add the cardamom, nuts, fruit, and plums, kneading thoroughly, first with the dough hook and then with your hands. Halve the yeast dough and form into two long loaves. Place these on a baking sheet lined with baking paper, cover, and let rise for 45-60 minutes. Bake the loaves in a preheated oven at 175-200 degrees Celsius for about 25-35 minutes. Remove the loaves and let them cool completely on a wire rack.
