Ingredients for 4 servings:
- 1 cucumber(s)
- 1 red bell pepper(s)
- 3 stalks of coriander
- 3 sprigs of mint
- 250 g natural yogurt
- ½ tsp cumin, ground
- ½ tsp coriander, ground
- salt and pepper
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Peel the cucumber and halve it lengthwise, removing the seeds with a teaspoon. Halve the cucumber halves again and cut into small cubes. Halve the bell pepper lengthwise, remove the seeds, wash it, and also cut it into small cubes. Wash the herbs, shake dry, and finely chop them. Mix the cucumber and bell pepper cubes with the yogurt and herbs. Season with cumin, coriander, salt, and pepper. Cover and let the cucumber salad marinate for about 1 hour. Serve garnished with mint and coriander, if desired.
