Spicy Indian salad with cucumbers, tomatoes, peanuts and chili

Ingredients for 4 servings:

  • 1 onion(s), red, finely chopped
  • 1 cucumber(s), finely chopped
  • 100 g tomatoes, ripe, finely chopped
  • 3 tbsp coriander greens, finely chopped
  • 1 chili pepper(s), red, finely chopped
  • 1 chili pepper(s), green, finely chopped
  • 1 ½ tbsp lemon juice
  • 1 tsp oil
  • 125 g peanuts, unroasted, roughly chopped (alternatively cashews)
  • 1 tsp salt
  • ½ tsp black pepper, ground
  • 1 ½ tsp spice mix (chaat masala)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine the onion, cucumber, tomatoes, coriander, chilies, and lemon juice in a bowl. Heat oil in a pan. Add the peanuts and salt and fry for one minute. Sprinkle with pepper and chaat masala, stir, and fry for one to two minutes (careful—it burns easily). Remove from the heat and pour over the salad mix. Season with salt just before serving to prevent the ingredients from releasing too much liquid.
