Crumb cake with quark and cherry filling

Ingredients for 1 servings:

  • 150 g sugar
  • 300 g flour
  • 1 tsp baking powder
  • 1 egg(s)
  • 100 g butter, soft
  • 500 g morello cherries, drained
  • 150 g sugar
  • 3 eggs
  • 1 packet of vanilla sugar
  • 500 g quark
  • 1 dashes lemon juice
  • 2 tbsp semolina
  • Fat for the mold
  • Breadcrumbs for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Quark cake

Place the first five ingredients in a bowl and make a batter. Mix with a hand mixer until a crumbly consistency is achieved. Place 150g sugar, 3 eggs, 1 packet of vanilla sugar, quark, lemon juice, and semolina in a second bowl. Mix with a mixer until a smooth batter is formed. Grease a springform pan and sprinkle with breadcrumbs. Pour two-thirds of the crumb batter into the pan and press it firmly into the base and sides. Add the drained cherries to the base and spread evenly. Pour the quark mixture over the cherries and spread the remaining crumbs evenly over the quark mixture. Bake in a preheated oven at 200°C (convection oven) for about 1 hour.
