Ingredients for 6 servings:
- 1 tsp sugar
- 20 g yeast (fresh)
- 150 ml water (warm)
- 200 g flour
- 1 tbsp Clarified butter or ghee
- 1 tsp salt
- 50 g clarified butter or ghee
- 1 tsp black cumin
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Place the sugar and yeast in a small bowl. Mix with the warm water until the yeast dissolves. Set aside and let rise for about 10 minutes, until bubbles form on the surface. Put the flour in a large bowl, make a well in the center, add the ghee/butter, salt, and yeast. Mix until smooth, adding more water if necessary. Knead the dough on a floured surface until smooth, then cover and let rise in a warm place for about 1 1/2 hours. Knead the dough again on a floured surface for 6 minutes, then divide into 6-8 equal portions and shape into individual balls. Flatten the balls into flat cakes about 1cm thick and 12cm in diameter. Preheat the oven grill. Place the cakes on greased aluminum foil and bake for 7-10 minutes, turning halfway through, brushing with ghee/butter and sprinkling with black cumin seeds. They taste best warm!
