Fish fillet in banana leaf

Ingredients for 4 servings:

  • 400 g fish fillet(s), to taste
  • 1 banana leaf
  • 80 ml coconut milk
  • 20 g curry paste, red
  • 2 kaffir lime leaves
  • 2 sprigs basil (Thai)
  • Black chili paste in oil
  • fish sauce
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the lime leaves into thin strips. Dice the fish. Mix together a marinade of the coconut milk, 1-2 teaspoons of curry paste, fish sauce, and sugar. Toss the fish in it. Cut the banana leaf into 4 pieces and spread with a little chili paste. Arrange the fish in the center of the leaf and top with the basil and lime leaves. Wrap it up in a parcel. Bake in the oven at 180°C for 20 minutes. Serve with fragrant rice and cucumber salad.
