Ingredients for 2 servings:
- 3 pieces of cod fillet(s), fresh or frozen
- 8 tbsp coconut milk
- 1 onion(s)
- 2 garlic cloves
- 2 stalk(s) lemongrass (or 1 heaped tsp ground)
- ½ tsp ginger
- 1 tsp turmeric
- 1 chili pepper(s), fresh or dried
- salt and pepper
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
First, wash the fillets and pat them dry. Peel the onion and garlic and chop them in a food processor along with the chili pepper and lemongrass. Gradually add the coconut milk, then the ginger and turmeric, and finally a good pinch of salt and pepper. Place the fillets in a baking dish and brush with the paste. Bake at 200°C (400°F) top/bottom heat for 20 minutes. Turn the fillets halfway through. We serve this with wild rice and salad.
