Tuna Noodles

Ingredients for 3 servings:

  • 2 cans of tuna, in its own juice
  • 1 small onion(s)
  • 1 can coconut milk
  • 125 ml chicken broth
  • 100 g peas, frozen or from a can
  • 1 tbsp spice mix (garam masala, alternatively curry powder)
  • 1 tbsp oil
  • 500 g noodles (Chinese wheat noodles)
  • some lemon juice
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Empty the tuna from the cans into a sieve with a bowl underneath. Fry the onion in the oil until translucent. Stir in the garam masala or curry powder and pour in the coconut milk, chicken broth, and tuna juice. Add the peas and simmer for 8 minutes. Season with salt. Meanwhile, cook the Chinese wheat noodles according to the package instructions. Tear the tuna into pieces and stir it into the sauce. Mix with the drained noodles. Refresh with a squeeze of lemon juice and slurp immediately from the noodle bowls.
