Mulled wine mousse

Ingredients for 4 servings:

  • 300 ml red wine, strong
  • 4 sheets of gelatin
  • 400 ml whipped cream
  • 1 stalk(s) cinnamon
  • 1 carnation(s)
  • 6 egg yolks
  • 80 g sugar
  • 1 orange(s), untreated
  • 1 lemon(s), untreated
  • 1 tsp mulled wine spice

Working time approx. 40 minutes; Total time approx. 40 minutes

Perfect dessert for the Advent and Christmas season

Bring the red wine to a boil and reduce by half. Then set aside and let cool slightly. Now soften the gelatin in cold water according to the package instructions. Grate the orange and lemon zest and juice the orange. Then whip the cream until stiff peaks. Then, add the egg yolks, orange and lemon zest, mulled wine spices, cinnamon stick, clove, and sugar to the reduced red wine and bring to a boil, stirring constantly. Remove the pan from the heat. Squeeze out the gelatin well and dissolve it in the mixture. Pass the cream through a sieve and chill over iced water. Now add the orange juice and finally, carefully fold in the cream. Pour the cream into molds or glasses and let it set in the refrigerator (preferably overnight).
