Ingredients for 1 servings:
- 200 ml oil (peanut oil) or another neutral oil
- 2 cloves garlic
- 3 handfuls of fried onions, from the Asian store
- Chili flakes or ground chili
- Salt

Sauce for seasoning Thai dishes
Pour the oil into a pan and heat it. Crush the garlic and fry it in the oil. Be careful! The garlic should only be lightly roasted and under no circumstances should it get too brown, otherwise the whole thing will taste very bitter. Now remove the pan from the heat. Add enough onions to the oil so that the oil covers the onions. Add chili flakes to taste and season with salt. Stir everything well and transfer to a jar. Let it steep for at least 3 days. You can use this sauce to season red Thai curry or any other Thai dish. The onions will keep for months in the refrigerator (which is how I keep them).
