Tomato soup made from tomato paste

Ingredients for 4 servings:

  • 1 small onion(s)
  • some oil for sautéing
  • 1 tbsp flour
  • 100 g tomato paste
  • 1 liter of water
  • 4 tsp broth, instant
  • some salt and pepper
  • Thyme
  • e.g. chives or parsley, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

easy and quick to prepare

Finely dice the onion and sauté in a little oil until translucent. Add the flour and sauté briefly. Add the tomato paste and sauté briefly (do not overcook it, or it will become dark and bitter). Slowly add water, stirring constantly. Bring to a boil and add the broth. Season with salt, pepper, and thyme. Then simmer for another 5-10 minutes. Garnish with chives or parsley, if desired.
