Sweet Thai chili sauce

Ingredients for 4 servings:

  • 7 chili peppers, long red, pitted, roughly chopped
  • 185 ml white vinegar
  • 8 tbsp sugar
  • ½ tsp salt

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Grind the chili peppers into a coarse paste in a mortar or blender. Bring the vinegar, sugar, and salt to a boil in a small saucepan, stirring constantly until the sugar dissolves. Then simmer for about 15 minutes until reduced to a syrup. Then add the chili paste and simmer for another 2-3 minutes. Transfer to a bowl, let cool slightly, and serve as a dip. This pairs particularly well with Thai fish cakes (Tod Man Plah).
