Ingredients for 1 servings:
- 160 g almond(s), finely grated
- 160 g hazelnuts, finely grated
- 250 g sugar
- 1 pinch of clove(s), ground
- 1 pinch of ground nutmeg
- 1 pinch of cardamom, ground
- 1 tsp cinnamon
- 2 tbsp honey
- 7 small egg yolks
- 50 g flour
- Wafers (as needed)
- 65 g candied lemon peel (if desired)
- 65 g candied orange peel (if desired)
- Cake icing
Instructions
Working time approx. 30 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 30 minutes
is easy to make, but needs about 6 hours of resting time
Place the ingredients (nuts, sugar, cinnamon, cloves, nutmeg, cardamom, and possibly candied lemon/orange peel) in a saucepan and mix. Then add the egg yolk and honey. Heat gently (do not boil!). Finally, add the flour and mix well. Be careful not to overwork the dough! Place about 2 teaspoons of the mixture onto one wafer. Do not spread it too thickly and spread it out with a knife! Now it’s time to rest. Dry the wafers covered with the mixture on a baking sheet for about 6 hours. Then bake in the oven at about 200°C for 12 minutes! If desired, top with chocolate/sugar/cinnamon glaze once cooled, or enjoy on its own. Wrap in aluminum foil until Christmas and store in a tin until Christmas Eve!
