Ingredients for 4 servings:
- 2 tbsp oil
- 500 g chicken breasts
- 1 tsp coriander
- 1 tsp curry, hot
- 1 onion(s), red
- 150 g zucchini (preferably very small)
- 250 g noodles (flat noodles)
- 3 tbsp soy sauce
- 3 tbsp honey, liquid
- ½ tsp chili powder
- 1 tbsp ginger puree
- 1 tsp turmeric
- 2 tbsp coriander, freshly chopped
- Salt and pepper, freshly ground
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Cut the chicken breast into bite-sized strips and season with coriander and curry. Halve the onion and slice into thin rings. Trim the ends of the zucchini, halve them, and slice diagonally. Brown the chicken breast well on all sides in a wok or pan, then add the onions and zucchini and cook for another 5 minutes. Meanwhile, cook the noodles and rinse well. In a bowl, combine the soy sauce, honey, ginger puree, chili, and turmeric. Add the noodles and mix well. Add the chicken, onions, and zucchini from the pan, mix well, and season with the coriander and a little salt and pepper.
