Ingredients for 4 servings:
- 500 g chicken
- 1 liter chicken broth
- 1 onion(s)
- 2 carrots
- 1 small celeriac
- 1 stalk(s) leek
- 1 bunch of parsley
- 50 g noodles (vermicelli)
- Salt
- pepper
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Place the meat in a pot with the broth and peeled onion and simmer over low heat for about 30 minutes. Then remove and chop, discarding the onion. Peel and dice the carrots and celery root. Trim and slice the leek. Add the vegetables to the soup and season with salt and pepper. Wash and chop the parsley, and add it as well. Simmer the soup for another 30 minutes. Add the vermicelli about 5 minutes before the end of the cooking time. Finally, season the soup with salt and pepper, garnish with some celery leaves, if desired, and serve hot.
