Heat oil in a pan. Add mustard seeds, cinnamon stick, cardamom pods, cumin seeds, curry leaves, and dried chilies. Add onions, garlic, ginger, and a pinch of sugar as soon as the mustard seeds pop. When the onions are translucent, add the lentils, coconut flakes, and chopped green chili and stir to combine. Pour in coconut milk and simmer. Add more water if necessary. Stir vigorously to break up the lentils. Season to taste with salt, turmeric, chili powder, cumin, garam marsala, and coriander.
